The United States needed to connect the east and west coasts. The solution? A transcontinental rail line. Two railroad companies, the Union Pacific and Central Pacific, were tasked with building the track, which met in Utah in 1869. This new railroad facilitated a thriving beef industry for the white population, which led to the rise of the American icon: the cowboy.
